When you build a home, or renovate your current home, one of the decisions you'll need to make is what type of cooking equipment do you want to use; gas-fired or electric, or perhaps a combination of the two. There are pros and cons to each type and the final decision usually comes down to personal preference.

Gas or Electric Kitchen: The Choice is Yours

Most professional chefs would agree; if you have a choice, go with gas for the cooktop. Gas ranges generally offer more precise and rapid temperature control than electric. And if you want to add a grill, gas seems to offer better options.

The main advantages to an electric cooktop are its cheaper up-front cost and the option of a smooth glass ceramic surface, or a thermostatically-controlled griddle plate. Unlike gas burners or electric coils, a ceramic surface adds a clean line to the countertops and means you’ll never have to clean spilled sauce out of a burner cavity again. And an electric griddle offers precise temperature control for those perfect Sunday pancakes.

For your oven however, electric convection heat has become increasingly more popular. Convection ovens have an internal fan that circulates the air inside the cooking chamber and cooks foods faster, most evenly and at lower temperatures.

Electric ovens tend to have more accurate and precise temperature control than gas ovens, and eliminate the problem of humidity build-up that occurs in gas ovens. Also, electric broilers have a more intense heat source than gas, providing faster, more even cooking.

Don't Overlook the Importance of Placement

When it comes to the placement of your oven and stovetop, there are a variety of flexible options to choose from:

  • A separate oven and cooktop can be paired together
  • An oven can be part of a range
  • Or an oven can be placed away from the cooktop, mounted on the wall or under a countertop 

Ovens: How Many are Right for You?

Is one oven enough for you? Do you entertain a lot, or have the family over for holiday dinners? You might want to consider installing double ovens.

Stacked double wall ovens have been a popular option but consider placing them at the same level side by side, or side by side with countertop space in between them. That way they’re more convenient for multiple cooks. 

If you only use both when entertaining or during the holidays, you may want the second oven to be a combination oven, a relatively new product on the market that is becoming more popular every day. You could get a combination model that allows you to use it as a microwave most of the time and as a convection oven when you need the extra cooking capacity. 

Consider that a separate cooktop and oven will lessen the concentration of heat in the kitchen. And don't forget, you’ll also be able to get gas burners for the cooktop and electric for the oven—an ideal combination usually only available to pro-style buyers. This configuration frees up space under the cooktop that can be used for storage to conveniently house pots and pans.

Whether It's Gas or Electric Consider Your Kitchen Ventilation Needs

The ventilation system you choose for your new cooktop or range is one product where you get what you pay for. You’ll pay more for units that offer the greatest air-clearing power and for those that make the least noise. The benefit of a higher quality system is more efficient removal of smoke and grease, meaning less odor and easier clean-up in your kitchen.

With less expensive ventilation, chances are you'll end up with a system that’s noisier and doesn’t clean as well. And if you don't like it, you may never even turn it on, particularly when you entertain.
